The perfect summer recipe has arrived. This flavor-packed dish is perfectly satisfying with the lean chicken, the healthy fats from the avocado, and light and refreshing thanks to substituting cauliflower rice. Try this simple meal if you’re look for a delicious grilled meal on a hot day.

Ingredients

  • Marinade (reserve some before adding raw chicken)
  • 3/4 cup fresh squeezed lime juice

  • 1/4 cup olive oil

  • 1 heaping tablespoon honey

  • 1 teaspoon cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 cup chopped cilantro

  • Other
  • 2 large chicken breast

  • 1 10oz package Green Giant riced cauliflower

Directions

  • Marinade (reserve some before adding raw chicken)
  • Combine all ingredients from the marinade ingredient list in a bowl.
  • Take about 1/4 cup of the mixture and reserve it to use later. Place it in the fridge, we will use this to add to the riced cauliflower and drizzle on our cooked chicken later.
  • Slice chicken breasts in half lengthwise, this helps the mixture penetrate and give a more even grill.
  • In remaining mixture, add raw chicken breast and toss to coat. Cover and allow to chill for 30 minutes to 2 hours, whatever your schedule allows.
  • Prepare Meal
  • Lightly oil the grill grate and then place the marinated chicken on the prepared grill, brushing extra marinade over the tops of the chicken. **Take your chicken out of the refrigerator and allow to sit out while the grill is preparing and be sure to discard any leftover marinade.
  • Grill for 10-12 minutes or until chicken juices run clear and internal temperature is at 165 degrees F. Remove from the grill and allow to rest while you prepare the riced cauliflower.
  • Cook the riced cauliflower according to package instructions and then add half of the reserved mixture.
  • Brush the resting cooked chicken with the remaining reserved mixture.
  • Serve with sliced avocado and enjoy.
