Easy One Pot Chicken Noodle Soup

Ingredients

  • 2 Tbsp butter

  • 1 lb chicken breast

  • 1/2 onion diced

  • 1/2 c carrot diced

  • 1/4 c celery diced

  • 1 garlic clove minced

  • 4 c chicken broth

  • 1 tsp better than boullion – chicken flavor

  • 1-2 c egg noodles (to your noodle liking, may need more broth/water)

  • Rosemary, thyme, parsley, black pepper, garlic powder, onion powder, paprika added to liking.

  • Optional add ins – Diced jalapeno, diced bell peppers, handful of chopped spinach, diced zucchini, frozen veggies

Directions

  • Melt butter in a large pot and add in the diced vegetables. Cook vegetables until tender, approximately 5-7 minutes.
  • Add the raw chicken to the pot and pour in the broth and seasonings, boil the chicken for 20-25 minutes, or until fully cooked.
  • Remove chicken from the pot and shred it, then add back to the pot and add the egg noodles.
  • Simmer until the egg noodles are cooked to your liking.
  • Optional add ins – Add peppers and other tough vegetables with the onions and carrots to get them tender, softer vegetables like spinach and frozen veggies can be added with the egg noodles.
  • Frozen veggies and cooked chicken – Add everything to the pot and simmer until noodles are tender.
