Ground Beef Enchiladas

1lb ground beef
1/4 large sweet onion, diced
1 jalapeno (optional)
2 cups shredded cheddar cheese
28oz can enchilada sauce
1 package favorite taco seasoning
8 medium taco sized flour tortillas
Directions
- Preheat oven to 350 degrees F.
- Prepare a 9×13 baking dish with a light coat of cooking spray.
- In a large frying pan, cook onions for 3-5 minutes until softened. Be sure to keep them piled on top of each other to sweat, single layered onions will burn quickly.
- Add ground beef to the pan and cook until browned completely. Drain off fat and add back to pan, add a 1/4 cup of water to the beef, and stir in the taco seasoning. Stir and simmer until water cooks off and beef is completely seasoned.
- Warm tortillas in microwave for 10-15 seconds.
- Pour about 1/6th of the can of enchilada sauce into the bottom of the baking dish.
- One tortilla at a time, add some cheese and desired amount of meat filling. Keep in mind we need to fill 8. Roll your tortilla into itself to make the enchilada shape.
- Lay enchiladas so they fit nicely into the pan.
- Pour remaining enchilada sauce over the enchiladas, and top with the remaining cheese.
- Bake for 15-20 minutes, until the cheese is melted and the enchiladas are thoroughly heated.
