Ingredients

  • 1/2 cup butter, softened

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 2 large eggs

  • 1/2 teaspoon vanilla

  • 3/4 cup creamy peanut butter

  • 2 large bananas, very ripe

  • 1 teaspoon baking soda

  • 1 3/4 cups AP flour

  • 1/2 cup or 1 cup chocolate chips

Directions

  • Preheat the oven to 325 degrees F. Either lightly grease a 5×9 loaf pan, or line with parchment paper.
  • In a bowl, combine the flour and the baking soda.
  • In a small bowl, mash ripe bananas and set aside. In another small bowl, lightly beat the egg.
  • In a large bowl cream together the softened butter and both sugars with a mixer.
  • Add in vanilla extract and eggs then beat well.
  • Mix in the peanut butter until combined.
  • Add the flour mixture a little at a time, mixing until just combined with each addition.
  • Add in chocolate chips.
  • Pour the batter into the prepared loaf pan. Use a utensil to flatten the mixture carefully as the batter will be quite thick.
  • Bake in the oven for 1 hour and 10 minutes.
  • Leave loaf in the pan on top of the stove, or counter, for 10 minutes before moving to a wire rack to cool completely.
  • Wrap tightly, or store in an airtight container, on the counter for up to 3 days.
