Blueberry Swirl Lemon Cheesecake

- Blueberry Topping
1 and 1/2 cup fresh blueberries
1 cup granulated sugar
1 tablespoon cornstarch
1 oz water
- Graham Cracker Crust
2 full sleeves graham crackers
1/2 cup granulated sugar
1 and 1/2 sticks butter, melted (3/4 cup)
- Lemon Cheesecake Filling
3 packages cream cheese (24 oz), softened
1/4 cup sour cream
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla
Zest of 2 lemons
3/4 cup whipping cream
Directions
- Blueberry Topping
- Make the blueberry topping first as it needs to be completely cool before it is swirled into the cheesecake batter. I recommend making this at least an hour prior to making the filling.
- Dump the blueberries and sugar into a medium saucepan over medium heat. After about 10 minutes the berries should begin to simmer. Stir frequently to prevent sticking and burning.
- Once the berries simmer, mix the cornstarch into the water and mix well. Pour the mixture into the blueberry sauce and stir continuously until the mixture thickens. When the mixture coats the back of a clean spoon with a decent jelly like texture, it is ready to cool.
- Crust
- Preheat the oven to 300 degrees.
- Line a springform pan with parchment paper.
- Crush the graham crackers to small crumbs and mix in a bowl with the sugar and melted butter. Mix until saturated.
- Press crust mixture into the prepared springform pan, press mix firmly down and up the sides of the pan.
- Bake in the oven for 5 minutes. Allow to chill while you prepare the cheesecake filling.
- Cheesecake Filling
- Combine the softened cream cheese, sour cream, and sugar into a bowl and beat with a mixer for 2-3 minutes to dissolve the granulated sugar.
- Add the eggs one at a time, mixing on medium until the last stripes of yellow fade from each egg.
- Mix in the lemon zest and vanilla until incorporated.
- Scrape down the sides of the bowl and pour in the cream. Beat mix on high speed for one minute.
- Pour the batter over the cooled graham cracker crust.
- Carefully place large spoonful’s of the blueberry filling on top of the cheesecake batter. Leave spaces between the globs to allow room for the swirl effect.
- Take the back end of a dining utensil and carefully swirl the blueberry mix throughout the surface of the cheesecake filling. Be careful not to touch the crust. We do not want to overmix this as we want the random swirl pattern.
- Bake the cheesecake in the oven for 1 hour and 20 minutes. The cheesecake will still be jiggly in the center.
- Prop the oven door and allow the cheesecake to sit in the cooling oven for 30 minutes. Then allow to cool completely on the counter. Our cheesecake is still baking when we turn the oven off, we don’t want to rush our cheesecake by putting it into the fridge too soon.
- Once cheesecake has cooled, allow to refrigerate for a few hours or overnight.
- When ready to serve, top with your favorite whipped topping, graham cracker crumbs, or fresh blueberries.
Notes
- If you forgot to take your cream cream cheese out to soften, follow this simple trick to soften it quickly! **Place a microwave safe bowl with water in it into the microwave and cook on high for 3 minutes. Carefully push hot bowl to the back to make space when it has finished cooking. Place packages of cream cheese, open but still sitting on package, into the microwave and close the door. The steam should soften the cream cheese within 20 minutes.
